The Pantry will be closed for Thanksgiving week. Fixings for Thanksgiving celebrations were readily available yesterday including potatoes, stuffing, squash, various canned and fresh vegetables and cranberries. With canned pumpkin, evaporated milk, eggs, sugar, flour and spices available, here’s a recipe for an easy pie crust:
Never Fail Pie Crust
3 cups flour
1 ¼ cups shortening
1 tablespoon vinegar
1 tablespoon sugar (optional)
2 teaspoons salt
1 egg
½ cup ice water
Mix flour, shortening, sugar and salt with a pastry blender. Beat the egg, add the water and vinegar and mix well. Combine two mixtures, a little at a time, until all the dry ingredients are moist. Divide into 2 balls, wrap and chill. Can be frozen or left in the refrigerator for up to two weeks. Makes enough dough for 2 crusts.
