Since a recipe has not been included for a while, here’s one with most if not all ingredients available in the pantry:
Banana Cake
2 1/2 cups all purpose flour
1 1/2 cups sugar or sugar substitute
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 cup shortening (oil is fine)
1 cup mashed banana (about 2 1/2 bananas)
2/3 cup buttermilk or sour milk (can use 2/3 cup milk plus a scant tablespoon of vinegar or lemon juice)
2 eggs
1 tsp. vanilla
Bake at 350 degrees.
Grease and flour two 9 inch round cake pans.
Combine first 5 ingredients and stir. Add shortening and banana and mix until combined (the mixture will be thick). Add milk, eggs and vanilla and beat until well combined (2 minutes or so). Turn into prepared pans and bake for about 30 minutes or until firm to the touch. Let cool for about 10 minutes before removing from pan. Frost if desired.
