Potato latkes, a traditional dish during the Hanukkah celebrations, is a simple, inexpensive meal with lots of recipe variants. Most root vegetables can be substituted for the usual potatoes; the following recipe calls for carrots.
Carrot Latkes
2 cups grated carrots
6 green onions, chopped
1/2 cup all purpose flour
1/2 tsp baking powder
3 eggs
3/4 tsp salt
pinch of black pepper
oil for frying
Pour about 1/2 inch depth of cooking oil in a large skillet and heat to medium heat (about 350 degrees).
Mix carrots, green onion, flour and baking powder in a bowl until thoroughly mixed. In a small bowl, beat eggs, salt and pepper together. Combine with carrot mixture and stir well.
Working in small batches (1/4 to 1/3 cup), spoon small mounds of the carrot mixture into the preheated skillet. Cook until browned, turn and brown the other side.
Serve with sour cream or Greek yogurt.
