Since we still have lots of canned pumpkin, here’s another delicious recipe:
Creamy Pumpkin Pasta
16 ounces of cooked pasta
1 onion chopped
1 red pepper, chopped
6 cloves of garlic, chopped
1 cup pumpkin
2 cups of stock of choice
1 cup white wine
1/4 cup evaporated milk
dash of nutmeg, salt and pepper
Saute’ onion, pepper and garlic until fragrant. Add pumpkin, stock, wine, milk and spices. Simmer 10 minutes and blend with an immersion blender or pour into the bowl/jar of a blender or food processor. Serve over the cooked pasta. Enjoy!
