The aroma in the pantry today was irresistible! A crock pot of Spicy Pumpkin Soup was offered as a taste treat to shoppers and volunteers alike.
Spicy Pumpkin Soup
12 corn tortillas
3-4 Tbsp oil
1 onion, chopped
2 garlic cloves, chopped
1 cup chopped cilantro
1 tsp. cumin
hot peppers of cayenne to taste
1 1/2 cup pumpkin
1 28 oz can diced tomatoes
5 cups stock (chicken, beef, vegetable – your choice)
1/2 tsp. salt
Cut 6 of the tortillas into strips. Heat oil in a soup pot. Add onion, garlic, cilantro and tortilla strips. Cook until onion is soft, stirring often. Add cumin and hot peppers. Cook for an additional minute.
Add pumpkin, tomatoes, stock and salt. Bring to a boil then cover and simmer for one hour.
Just before serving, fry the remaining tortilla strips in 2 batches until golden brown. Ladle soup into bowls and top with the fried tortillas and cilantro. Enjoy!!
