Warmer but windier . . . every day has its challenges and blessings.
Oats, black beans, carrots and onions are available in abundance at the pantry. Here’s a black bean burger seasoned with chili powder.
1 15 ounce can of drained black beans or 1 1/2 cups cooked and drained
1 cup rolled oats
1 1/4 salt
1 carrot chopped
1 tsp. ground cumin
1 tsp. chili powder
1/2 tsp garlic powder
1 red or green pepper, chopped
1/4 onion, yellow or red, chopped
1/3 cup fresh parsley, chopped
2 Tbsp. olive oil
+ oil for frying
Place all in ingredients (except oil for frying) in bowl of a food processor and process until the mixture starts to stick together leaving some texture to the ingredients. To mix by hand, be sure all vegetables are chopped fine, then mix well with other ingredients in a bowl.
Scoop in 1/3 cup quantities and shape into a burger.,
Pan fry with the extra oil until crispy on the outside but tender on the inside. Flip to crisp the other side.
Serve as is or with burger type toppings in a bun.
These freeze well cooked or uncooked for up to 6 months. Separate the patties with parchment paper.
