Recent weather patterns have not been conducive to accessing food at the pantry for some people. As you can imagine, predicting attendance is near impossible. For some perishable foods, our 3 refrigerators (2 commercial) extend storage time but attention to what we have and ordering what we need is a challenge.
Potatoes are available every week as are eggs, milk and onions. Here’s a recipe for Potato Crust (great with any quiche filling):
CRUST
4 cups coarsely shredded uncooked potatoes (about 4 large)
1/2 cup chopped onion
1 large egg, lightly beaten
1 cup all-purpose flour
1/2 teaspoon salt
DIRECTIONS
In a large bowl, combine crust ingredients; press into a well-greased 10-in. deep-dish pie plate. Bake at 400° for minutes.
